  • Ingredients

    • ¼ cup (60ml) Dry White Wine (Chardonnay).
    • 1 Tablespoon Fresh Lemon Juice.
    • ¼ cup (60ml) Cream.
    • 125g Cold Butter, cut into squares.

    Method

    • Combine wine and juice in a small saucepan and bring to boil.
    • Continue boiling without stirring until it has reduced by two-thirds.
    • Remove from heat, add cream, return to heat and bring back to boil.
    • Whisk in piece of butter, allow to melt and then add another piece (do not allow mixture to boil while adding the butter).
    • Continue until all butter has been stirred in and remove from heat.
    • Mixture should be smooth and creamy.
